Power protein cookies

4 cups rolled oats
1 can cannellini beans, rinsed
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup chopped pitted dates
1/2 cup flaked coconut
1/2 cup raisens
1/2 cup chopped walnuts

Preheat oven to 350. Grease cookie sheet. Grind the oats in a blender .

In a bowl , mash beans to a smooth paste. Stir in the white sugar, brown sugar, and vanilla. Combine the oats, baking powder. Baking soda, and cinnamon. Blend into the beans. Stir in the dates, coconut, raisens and walnuts. Drop dough into spoonfuls on cookie sheet.

Bake 10-15 min. Cool for 15.
