This is a great healthy recipe for all you Mexican food lovers.
1 tablespoon vegetable oil
2 skinless boneless chicken breasts
1/2 cup chopped onion
1 can chopped green chili peppers
1 package taco seasoning mix
1/2 cup sour cream
2 cups cottage cheese
1 teaspoon salt
1 pinch black pepper
12 corn tortillas
2 cups shredded cheese
1 can enchilada sauce
To make meat mixture: heat oil in med skillet over medium high heat. Add chicken, onion, and green chilies and sauté until browned. Then add taco seasoning mix, and prepare meat mixture.
To make cheese mixture: in a medium bowl, mix sour cream, with the cottage cheese and season with salt and pepper. Stir until well blended
Preheat oven to 350
To assemble the enchilada, heat tortillas until soft. In each tortilla, place a spoonful of meat mixture, cheese mixture, and a bit of shredded cheese. Roll tortillas and place in highly greased 9×13 baking dish. Top with any remaining meat and cheese mixture, enchilada sauce and shredded cheese.
Bake at 350 for 30 minutes or until cheese is melted and bubbly.

Hi there! I’ve gotten a few emails this week of women asking me about how to prevent shine with makeup. When working out, I recommend NO makeup. It clogs pores because through a good workout , you will sweat . I really don’t like going to the gym watching a woman working out with a face full if makeup. I know when I work out , it gets the blood flowing and I actually like how my face looks after a workout believe it or not, BUT when I’m not working out, I have turned myself onto an amazing light foundation which I only wear when I go out. I have been using the perfect matte liquid dolce and gabbana foundation. It is a bit pricey , but wow I have never used a foundation quite like this! One thing to zap the shine is use a light serum ( primer) before your foundation and then top with a light powder. Use a light brush to apply your powder. If you use the pads that come with some , you can get the cakey look.

!2 eggs, beaten
11/2 pounds ground breakfast sausage
16 oz. shredded mozzarella low skim cheese
2 slices wheat bread, torn into pieces
Pre heat oven to 350, Brown sausage in a large skillet, over medium high heat, Drain off grease, and set aside to cool. Pour the eggs into a lightly greased 9×13 inch baking dish. In a separate large bowl, combine the sausage, bread and 12 oz. of the cheese. Mix well and pour into the egg mixture. top with the remaining 4 oz. of cheese. Cover with foil.
Bake at 350 degrees for 15 min. , uncover, and bake until casserole is golden brown and bubbly.
A lot of people tell me a lot of the time that one thing they get confused on when following a training plan, whether getting ready to run a 5K, or even trying to lose a few pounds, but gain more muscle is “I really don’t know how I should be eating”, It can be a bit confusing because you wonder should I stick with low fat, high protein, low carbs? Well, it all depends on your body for one, and How much your working out, and its all based on how many calories your body needs, which is based on your weight, and how many pounds you want to lose. I do want to tell you that I have some great pre workout meals before your workout that are healthy and provide the protein & carbs that your body needs. Greek yogurt with a banana , a high fiber cereal, ( whole grain such as Go Lean cereals, Peanut butter ( natural), on high fiber toast. Oatmeal ( natural).. not the sugar filled packets are good for muscle building, & egg whites. Egg whites can be used in a variety of ways , and in a lot of different recipes. Hummus, is also a good product to use for muscle building. The best way to start a eating plan, is write down your weeks meals, pre plan them, and that way you know the times and meals to eat.
