For all of you Mexican cuisine lovers, this is an amazing meal for you. I use all organic products in this bowl, and it is simply divine. I absolutely love the Chipotle bowls, but with those, you can get a ton of sodium intake. This burrito bowl is something that I fix on quick nights when I’m running the kids around and everyone loves it!
-1/2 can organic vegan black beans
-1 avocado pitted and sliced
-1/2 cup seasoned organic corn
-1 small red pepper sliced
-1/2 cup vegetable mozzarella cheese
-A little cilantro on top!
