There’s no other way to start the day than with a powerful, healthy breakfast. I’m a fruit lover, and I am constantly putting together fruit dishes, salads, and parfaits. When you hear the word parfait, it can sound “fattening.” My parfaits are NOT fattening; they are healthy and fuel filled. One of my favorites is my blueberry and mango. This is so delicious and filling. It is loaded with fiber and healthy nutrients to get your day going the right way. Try this at home, and let me know what you think!
-1/4 cup blueberries
-1 mango sliced
-1 cup of Greek plain organic yogurt
-1/3 cup walnuts chopped (or almonds if you prefer)
Layer with a bit more fruit and maybe sprinkle cinnamon on top. Voila!
