I wanted to give you a recipe that I seriously cannot live without. They are my no-bake energy bites. You can get on Pinterest and see lots of different recipes for these bites, but I make mine a bit different. I try to keep mine as low in calories and sugar as possible, so I skip the chocolate chips. You can add carob nibs if you’d like, but the ingredients that I use make these energy bites delicious. I exchange my protein bars for these, because protein bars can be loaded with sugar, saturated fat, and sometimes very little protein. Those bars are what I call “junk bars,” because that’s exactly what they are. If you make these energy bites, try to eat a few a day instead of a protein bar. You’ll feel great!
-1 cup dry oatmeal (old fashioned oats)
-1/2 cup peanut butter
-1/2 cup ground flaxseed
-1/3 cup honey
-1 teaspoon vanilla extract
-1/3 cup chia seed
Mix all these ingredients together, roll into 1 inch balls, and chill. ENJOY!
