I want to share one of my favorite summer salads. I’ve been making this for years, and to this day it is still a hit. It’s full of great vegetables, full of nutrients, and has great fiber content. It’s so easy, and is great served with pita bread or taco chips.
-2 can organic black beans (seasoned)
-2 red peppers, diced
-2 yellow peppers, diced
-1 red onion, diced
-1 cup low-fat skim mozzarella
-1/4 cup olive oil
-1 package organic taco seasoning
-2 cans corn
Dice all peppers and onions. Place in a bowl. Add beans and corn in a bowl. Add the peppers and onion with taco seasoning and olive oil. Toss and enjoy!

I hope you’re all having an amazing weekend! With the holiday, there will sure be lots of cocktails and good food, so I hope you’re getting your daily workouts in so you can enjoy those things even more. You can use healthy substitutions with your recipes, and make healthy dishes. If you feel you have gotten off track a bit with your eating, jump right back on. Go take a run or a long walk. I had a late night last night, but jumped right up this morning to go for a run, and it felt great! Any little steps help when you know you’re going to have a celebratory weekend. Drinking lots of water helps – it fills you up and prevents overeating.
