I love to bake, and I love baking healthier options even more, because we all probably have a bit of a sweet tooth, and love healthy delicious treats. I enjoyed making this recipe that I found fromTaste of home, which is one of my favorite sites, and I added a bit of fun to this recipe by using heart shape cookie cutters to add a bit of Valentine fun!
This recipe will make 2 loaves , with 12 slices each.
– 2 cups gluten free all purpose flour
-1 teaspoon baking soda
-1/4 teaspoon salt
-2 cups mashed riped bananas
-1 cup sugar
-1/2 cup unsweetened apple sauce
-1/3 cup canola oil
-1 teaspoon vanilla extract
-1/2 cup chopped walnuts
In a large bowl, combine flour, baking soda, and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce , oil, and vanilla. Stir this into the dry ingredients. Transfer to two 8 in by 4 in loaf pans, coated with baking spray, sprinkle with walnuts , and bake at 350 degrees for 45-55 minutes. Let cool for 10 min. Enjoy!
