One of my favorite salads of all time is the Caprese. Its one of my summer favorites with ripe tomatoes, and sliced mozzarella. This is a great pair with a good fish such as a lemon pepper tilapia, (which I absolutely love). If you aren’t a huge green salad lover, this may be just the salad for you! I usually do not make my caprese salads with greens, but you are more than welcome to add it . I do drizzle a little olive oil and vinegar on my salad , instead of using balsamic .
If you aren’t a fish lover, this is an amazing salad to be paired with a good steak also.
1 -16 oz. package of fresh organic mozzarella . ( cut them into 1/4 inch slices
1/4 teaspoon black pepper
1/2 cut fresh basil leaves
1/4 cup olive oil & 1/3 cup vinegar
1.5 cup organic cherry tomatoes ( or organic sliced tomatoes
Optional : 2 cups organic spinach leaves or kale
Mix together and enjoy. This salad is loaded with antioxidants and fiber.
