Who doesn’t love coconut? It reminds me so much of what I love the best which is the beaches, Caribbean, SPF lotions, sitting around my favorite Vegas pools, and so much more. It seems I can’t get enough of it these days. Currently my favorite is coconut milk, which I drink everyday as a part of my morning smoothie.
The recipe below is one Of my favorite smoothies. It’s loaded with fiber, potassium, antioxidants, and will revive your energy. Coconut milk has a lot of great vitamins and minerals, and it’s best to find one that is of good quality.
- 1 frozen banana.
- 1 cup kale ( organic)
- 1 cup organic coconut milk
- 1 mint leaf
Blend and enjoy! This is a wonderful smoothie that can be a morning starter or an afternoon pick me up!
