I have to share with you this wonderful recipe that I found in Optimum Nutrition. Its delightful as well as delicious. This is perfect to get those antioxidants through the fall season and winter months. I know a few of you think green soup, no way, but it’s delicious. 

This is a great recipe by Amelia Freer, nutritional therapist for people like Boy George and Sam Smith. It’s in her amazing recipe book, Cook, Nourish, and Glow. 

  • Olive oil
  • 1 onion, chopped
  • 1 head of broccoli, cut into florets
  • 3 handfuls of fresh or frozen peas
  • 3 cups vegetable or chicken stock
  • 1 small bag of baby spinach
  • 1 green chili, chopped to sprinkle on top
  • A small handful of fresh parsley, chopped to serve

For the cashew cream

  • 1 cup raw cashews
  • 1 3/4 water & 1 1/4 cups hot water 
  • 1 clove garlic
  • Zest of 1 lemon

A few hours before making this soup, prepare the cashew cream. Put the cashews into a bowl, pour over the hot water, and leave to soak for atleast 2 hours. Once the cashews are tender, drain and put into food processor, along with 1 1/4 cups fresh water, the garlic, and lemon zest and blitz until completely smooth and creamy . Set aside. 

Heat one tablespoon of olive oil in a rage saucepan, and sweat the onion until translucent. Add the broccoli and peas to the pan, cook for 5 min, then add the stock. ( the vegetables should be just covered). Bring to the boil. Simmer until the broccoli is tender. ( roughly 4 min). Don’t over cook the vegetables or they will turn a full green. Using a stick blender, start blending the soup , adding a handful of spinach at a time, the spinach will cook as its mixed with the soup. Blend until the soup is smooth and thick, then stir through half the cashew cream. Serve in bowls with a swirl of cashew cream on top and fresh parsley and chili, if using scattered over. Yummy!!!

Inflammation is a word that we really don’t like hearing. There is nothing good that comes from it. Inflammation can cause an array of health problems, anywhere from diabetes to being over weight. Long term inflammation can provoke many types of cancers, so its very important for us to keep our bodies healthy and happy for that matter. Stress is a huge component for inflammation in the body. The stress signals turn on in our bodies, and it can cause many health issues to arise over time. There are many factors that you can do in your daily life to reduce inflammation in your body, and get your body to a more balanced PH. When I say balanced PH, it’s important to keep our bodies alkalized. This all starts with eating a more alkalized diet.

  • Choose Organic when you can. I cant tell you enough how many pesticides are on food now days. You may think that its clean, no matter how many times you wash your fruit and veggies, but believe me, its NOT enough. Organic produce is so much cleaner and safer . It may be more expensive, but it’s well worth your health.
  • Try the 80/20 diet. This is exactly how I eat, and I never feel deprived. Eat 80 percent of your food from more alkalized foods such as greens, veggies, nuts, ect, and 20 percent from the foods that you think aren’t so healthy. If you know your going to a party and there will be some “party food” there, try to eat super healthy through the day, that way you can splurge a bit that night.
  • Choose veggies over anything else in your diet. Vegetables are very alkalizing, and they do contribute to optimal health. Try adding more veggies to your juices every day, and reducing your intake of white flour products such as bread, and horrible pastas. Pastas can be horrible for your diet if you are not buying the right kinds.
  • Take a multi vitamin every day, and a good one at bat. I love my whole food vitamin that I take very day. It is full of greens, mushrooms, and alkalizing supplements. It truly makes me feel so much better.
  • If you haven’t already, ADD your omega 3’s to your diet. I take a supplement, but you can get them from good fish. They really can help combat inflammation in the body.
  • Try exercising every day. Moving that body never hurt anyone. It truly is great for your health. Add in a class, or go for a run or walk.
  • Try meditation or yoga to reduce stress in your life. If you are feeling a bit stressed out, or feeling fatigue, these things can help significantly. Stress will increase the inflammation. Remember the saying : “STRESS WILL KILL YOU”. There is nothing good about it. Life is too short to stress. Enjoy your life every day! exercise is important

One way to get the best out of your workout , is fueling correctly before and after. If you do not fuel correctly, you will find your muscles will get tired, sore and you may start feeling lethargic. You want to train your body to burn fat for fuel. That’s the key! Your body uses two types of fuel: sugar or fat. The sugar portion , known as glycogen is the sugar where carbohydrates are broken down into the digestive system. Glycogen is then stored in your muscles and liver. Fat is a far more better fuel for your body. If you eat three meals daily, you will not deplete your glycogen. Some healthy fats to consider are: coconut oil, pastured eggs, nuts, ect. You want to time your meals where the fat burning will start . 

You do not want to skip breakfast. This is the most important meal that starts your metabolism up. You do not want to skip dinner either. The big component to remember is what to eat and not eat before a workout. Stay away from sugary foods and drinks , and yes this includes those horrible ” so called protein bars that have hardly any protein, but loaded with sugar. These bars are everywhere! Pick a good bar that has high protein, but yet low in sugar. Avoid: energy drinks, sports drinks, and any type of fruit juice. These are all loaded with sugar. If you think that loading up on carbs is the ideal, think again. That is commonly used by high endurance exercisers, but regular exercisers should look more towards high , healthy protein to get your fuel. Try to drink green tea, water, or even organic black coffee. A good whey protein shake is also great fuel for a workout. It’s all about clean eating also. After your workout, try drinking a good recovery drink, and eat good healthy protein for dinner , such as a good fish or health organic chicken with organic vegetables. You can pick healthy carb options . Eating clean and training mean is the key !
