It’s Chocolate month , and there is no other way of celebrating it , other than with the Best pancakes on Earth. These Gluten Free Chocolate Pancakes are to die for. I love making these on the weekends. I do add bananas and walnuts sometimes, so that is an option. I did add the bananas to the recipe. These are a healthy breakfast option for any chocolate lover. 

  • 1 cup gluten free oat flour
  • 1/4 cup arrowroot starch
  • 1/3 cup raw cacao powder
  • 2 tbsp coconut sugar
  • 1/2 tsp baking soda
  • pinch of sea salt
  • 2 bananas
  • 2 organic eggs ( cage free)
  • 2 tbsp coconut oil
  • 1/3 cup unsweetened almond milk

You want to place all the ingredients in a food processor , and mix until smooth. On a heated skillet, add a bit of coconut oil and let melt. Scoop the batter of the size of pancake you want, allow to cook then flip. You can make all the Pancakes you desire. I love topping mine with a bit of real maple syrup and cinnamon. Any toppings are your choice. For this month, have a bit of fun and cut them into hearts.
