Eggplant Parmesan

Hi ladies!

You all know how much of a health nut I am, and I truly believe taking care of the inside is just as important as taking care of the outside. I watch daily what I put in my mouth, And try to eat organic as much as I can.

I try to share one of my favorite recipes with all of you each month. These recipes are healthy and super delicious. One of the reasons I love this recipe so much is because it’s not only delicious, but loaded up with tons of vitamins and antioxidants. This is a favorite around our home, and I hope you enjoy it as much as we do. This is a favorite of mine from Martha Stewart.

-4 medium tomatoes , halved

-1 shallot, halved lengthwise

-1/4 cup extra virgin olive oil

-Himalayan salt and black pepper

-2 large eggplants , cut lengthwise into 1 inch planks

-1 pound fresh mozzarella

-1/4 cup thin sliced fresh basil leaves

-1 loaf of rustic bread Egg plant Parmesan

Preheat grill to medium high. Brush cut sides of tomatoes and shallot with 1 tablespoon oil . Grill , cut side down , until charred in spots. 4-5 minutes. Flip and continue cooking until vegetables are slightly softened. 2-3 minutes. Transfer to a cutting board . When cool enough to handle , roughly chop and transfer to a bowl. Season with salt and pepper.

Brush both sides of eggplants with remaining 3 tablespoons of oil. Season with salt and pepper. Grill, turning once , until lightly charred in places and almost tender. 4-5 minutes per side. Transfer to a plate.

Top eggplant with mozzarella. Return to the grill and cook. Covered and until cheese melts. 1-2 minutes. Top evenly with tomato mixture , and sprinkle with basil , drizzle with oil, and serve with rustic bread.

I use all organic products, but you are more than happy to use whichever ingredients you choose.

Zucchini noodle & shrimp salad

It’s time to throw away that pasta , and replace it with delicious zucchini noodles. You will replace the carb filled , non nutritious pats with antioxidant filled zucchini. The most amazing thing is, you will not taste a difference. Zucchini noodles are perfect for those pasta dishes that the whole family will love. 

If you are making this recipe, it’s best to use a vegetable spiralizer. It’s easiest that way to get gorgeous zucchini noodles. 

This will serve 2 people. If you want more, you can double the recipe. 

– 2 small zucchini

-2 cups shrimp

-1/2 cup pesto 

-1 cup Parmesan 

– Pepper to taste 

-2tsp olive oil 

In a medium skillet, pour the olive oil in and put on low to medium heat. Once it warms up, throw the zucchini noodles in and cook for about 5-7 min . Set them aside. Throw in the shrimp , until it’s cooked on both sides. Pre cooked shrimp is ok to use also. Throw in the pesto and Parmesan. Place the zucchini noodles back in and stir. Add in pepper. It’s so delicious. Enjoy!

Divine Kale Pizza

Hi Dolls! 

This is going to be a recipe you will not forget. I love to be healthy, but you can make your favorite pizza with added Kale to make it into one healthy pizza for the whole family. 

You know that Kale Is loaded up with antioxidants and vitamins to keep your body balanced and healthy. This recipe is sure to have you craving pizza more often. 

  • 1 organic flax pizza crust ( mostly sold online or at your local health food store) if you can’t find, one whole wheat crust will do
  • 1 1/2 cups chopped organic kale 
  • 2 tbsp olive oil
  • 1 cup veggie cheese or low skim
  • Mozzarella 
  • 1/2 cup favorite pizza sauce 
  • 1/2 cup pesto sauce ( mix with spaghetti sauce ) 
  • 1/3 crushed oregano diced tomatoes 

Place all ingredients on the pizza crust , adding the toppings last ( cheese and kale ) . 

Bake at 350 for 45 min – hr. Make sure golden brown. This is the most divine pizza loaded with health. Enjoy!

The benefits of cacao for your health

Strawberry and blueberry pie

Hi ladies! 

I have the perfect dessert for this fall season. I love a mixture of fruit in pie. It’s so delicious and is a hit with my family. I had to share it with you so that you can see what you’ve been missing. 

-2 cups organic blueberries

-2 cups fresh organic strawberries cut

-3/4 cup sugar 

-1/4 cup cornstarch

The zest of an orange

-2tbsp butter

-1 organic free range egg 

-1 tablespoon water

-1 unbaked organic pie crust. 

Preheat the oven to 400 degrees. Stir together your blueberries, strawberries, sugar, cornstarch and zest . Pour in unbaked 9 inch pie crust . Beat together your egg and water. Lightly brush mixture into top of pie crust. Bake 50-55 min. You will love it!
